In a high-speed blender, combine the almond milk, almond butter, maple syrup, salt, and cinnamon. Blend until frothy and smooth.
Pour the almond milk mixture into a medium bowl. Add the oats, chia seeds, and sliced banana. Stir until well combined. Divide evenly between two 2-cup (500 mL) glass jars, cover, and let rest in the fridge overnight.
In the morning, top the oat mixture with yogurt, sliced banana, almonds, coconut chips, and any additional toppings, if using.
